Grandmothers Easy Peach Cobbler
-2 29oz. cans of Greer or O Sage Peaches in heavy syrup- Drained- Reserve Syrup
-1 Yellow Cake Mix (Not Pudding)
-1 Stick of Butter
Pour both cans of Peaches and Juice from 1 Can into a 9 X 13 dark or glass baking pan. Put cake mix on top and push down with back of spoon to moisten. Melt the stick of butter and drizzle on the top. Bake at 350 degrees for 35 to 40 minutes, until golden brown.
Black Bean Soup
-1 Onion, Chopped
-2 Small Garlic Cloves, Minced
-1 Tablespoon Olive Oil
-2 16oz. Cans Garcia Blackbeans, Drained
-1 15oz. Can Margaret Holmes Stewed Tomatoes-Drained/Chopped
-1 10oz. Can of Chicken Broth
-½ Cup Picante Sauce
-½ Cup Water
-¼ Cut Chopped Fresh Cilantro (Optional)
-1 Teaspoon Cumin
-2 Tablespoons Lime Juice (1 Lime)
Sauté Onion and Garlic in Olive Oil in a saucepan until tender, stir in the Garcia Black Beans, Tomatoes, Broth, PIcante Sauce, Water, Cilantro, and Cumin. Bring to a Boil, reduce heat, simmer until desired consistency, stirring occasionally, remove from heat, stir in the lime juice, ladle into soup bowls. (4-6 Servings)Garnish with corn chips and/or sour cream
Margaret Holmes Pecan Pie
-1 28oz. Jar of Margaret Holmes Pecan Pie Filling
-Remove Lid and place in Microwave
-Heat for 2 minutes (Watch for foaming over)
-Mix 3 Eggs and 4 tablespoons of butter in large bowl
-Pour contents of jar into bowl with eggs/butter and mix
-Pour contents of bowl evenly into 9 inch frozen deep dish pie crust shell.
Bake at 300 Degrees for 78 to 92 minutes (Pie is done when center is jelled)
Remove from oven and cool.
Mrs. Swink’s Vegetable Soup
-4 cans of MH Stewed tomatoes
-2 cans of MH tomatoes, okra, and corn
-2 cans of drained MH okra
-2cans of drained MH lima beans
-Ham Bone
Boil Ham bone and then add ingredients. Add salt and pepper to taste. Bring to boil then let soup simmer for one hour. Serves 8 to 10 people.
Ted and Jean’s Louisiana Shrimp
-1 can of MH tomatoes and okra
-1.5lbs. of shrimp
-2 cloves of garlic, whole minced
-1 cup of Lemon Juice
-1 cup of olive oil
-1/2 cup of butter
-1/2 teaspoon of cayenne pepper
-1 can of MH tiny field peas
-1 teaspoon of file powder
-rice
Marinate shrimp with garlic butter for 6 hours. Mix ingredients and cook shrimp until pink. Cook your choice of rice. Serve the Louisiana Shrimp over rice and enjoy!
Aslund’s Shrimp Creole
-2 cans of MH tomatoes and okra
-2 cups of onions
-1/2 cup of white wine
-1 cup of parsley
-1 can of diced tomatoes
-teaspoon of cayenne pepper
-2 lbs. Of shrimp
-quarter cup of bell peppers
Cook shrimp and then add and mix ingredients. Bring to boil and serve over rice.
Squash and Cheese Casserole
-2 cans of MH cut yellow squash drained
-1/4 cup chopped onion
-cup chopped cheddar cheese grated
-1 egg beaten
-4 Tbs. Margarine
-1/4 cup chopped bell pepper
-1/2 Tsp. Sugar
-Parsley
-Salt and pepper for taste
-1 slice of bread crumbled
Saute onions, bell peppers in margarine until wilted. Combine with drained squash. Fold in cheese, sugar, egg, salt, and pepper. Pour into 1 quart gresased casserole dish. Top with parsley and crumbled bread. Bake uncovered for 30 minutes at 350 degrees.
Pickled Peach Salad
-3 oz. Packaged orange jello
-1 cup of boiling water
-22 oz. Jar of Pomona Sunshine Pickled Peaches undrained
-cup finely chopped celery
-cup chopped nuts (optional)
Dissolve gelatin in boiling water; set aside. Drain peaches, reserving 2/3 cup juice. Add peach juice to gelatin mixture and stir well. Coarsely chop the peaches and add with the celery and nuts to the gelatin mixture. Pour into individual molds. Serve with dressing of pineapple yogurt with a little cool whip and miracle whip added in.
Osage Peach Pie
-2 sticks of margarine
-2 Cups Sugar
-1 ½ Cups Milk
-1 ½ Cups Self-Rising Flour
-1 Can (29oz.) OSAGE Peaches
Melt butter in pan (9” by 13”) in 350 degree oven. Cut peaches in two and place pit side down in pan of melted butter. Mix sugar, milk, and flour together and pour in pan with butter and peaches. Add about ½ of liquid from the can of peaches. Bake one hour at 350 degrees. Cut oven off after one hour and leave in oven about 15 minutes.
