Champion Potato Dish
Ingredients:
2 ½ lb. bags hash brown potatoes
½ stick melted butter
1 medium onion chopped well
½ tsp each of Salt and pepper
1 (8oz) sour cream
1 can cream of chicken – no water added
1 can cream of chicken-mushroom
1 small Dromedary pimentos – drained
3 tbs. Texas Pete
2 ½ cup shredded sharp cheese
1 cup cooked chopped chicken - pre package
½ can Margaret Holmes Black-eyed Peas – drained
Recipe Instructions:
Mix – potatoes, butter, onion, salt, pepper, sour cream – mix well. Add both soups, pimentos, Texas Pete, cheese, chicken. Mix and pour into 9 x 11 casserole dish – spray dish with Pam. Sprinkle bacon bits over top and cover with foil. Bake 45 minutes at 350 degrees, remove foil. Cook 15- 20 minutes more until golden brown
