Fiesta Chicken

Ingredients:

4 Boneless skinless chicken breasts
2 tbsp. salt
½ cup shredded mozzarella cheese
1 small onion diced
½ teaspoon salt
1 (12 oz) jar of Dunbar’s Roasted Red Peppers
1 can of Margaret Holmes Tomatoes, Okra, and Corn

Recipe Instructions:

In a large non-stick skillet, coat evenly with 2 tablespoons olive oil. In a separate container – salt chicken breasts with one teaspoon of salt. Add chicken to skillet
Over medium heat, brown both sides of chicken breasts. Add diced onion and Dunbar’s Roasted red peppers. Cook covered for 15 additional minutes or until onion is tender. Add Margaret Holmes tomatoes, Okra, and Corn. Top evenly with ½ cup of mozzarella cheese and simmer an additional 30 minutes. Serves 4
