George’s Recipe
Ingredients:
1 small can of tomato paste
2 cans of Margaret Holmes tomato, okra and corn
Texas Pete hot sauce
1 cup of onions, chopped
1 cup of bell peppers, chopped
2 cloves of garlic, chopped
2 cans of chicken broth
6 cups of left over ham (as lean or fatty as you like, but no skin)
Water to thin if needed
Recipe Instructions:
Brown tomato paste until it turns dark. Add onion, garlic, and pepper and cook till soft. Add ham and bring up to heat. Add chicken broth and bring to boil. Let simmer for 1 hour, add water if too thick. Serve over rice or as a soup. Season to taste with Texas Pete hot sauce. Do not add salt or other seasonings until fully cooked because everything is already seasoned. As in any soup, this tastes better if you let it rest before serving.
