HOT! HOT! HOT! Chicken Okra Chowder
Ingredients:
2 cups boneless skinless chicken, coarsely chopped
4 tbsp. butter
1 small onion, chopped
1 clove garlic, minced
1 can Margaret Holmes tomato, okra, and corn
1 can (14 ¾ oz) creamed corn
2 cups chicken stock
1 lb shredded pepper jack cheese
2 cups of half and half cream
1-2 tsp. Texas Pete hot sauce
Recipe Instructions:
Cut chicken breasts into ½ to ¾ pieces. Melt butter in Dutch oven or large stock pot. Add onion and garlic and cook on medium low heat until onion is soft. Add chicken and sauté until brown and no longer pink inside. Cook, stirring, until onion is soft and transparent. Add the can of Margaret Holmes to the chicken onion mixture and stir to combine. Add chicken stock and cook until heated, stirring until well mixed. Add in shredded cheese and cook until melted and slowly add cream. Stir to combine all ingredients and simmer until thoroughly heated. Season to taste with hot sauce.
