Margaret’s Cowlard Quiche
Ingredients:
1 can of Margaret Holmes seasoned collard greens
3 eggs
1 cup of half & half
1 cup swiss cheese (shredded)
1 cup feta cheese (crumbled)
¼ cup parmesan cheese (grated)
1 tbsp. Dijon mustard
1 tsp. salt and pepper
1 deep dish pastry pie shell
Preheat at 425 degrees
Recipe Instructions:
Cool pie shell- prick the bottom to test. Drain the collards. Lightly beat eggs, half and half, mustard, pepper and salt. Spread the collards in pie shell, gently adding swiss cheese and feta cheese. Pour egg mixture over collard cheese and lightly combine all ingredients. Sprinkle with parmesan cheese. Bake at 425 degrees for 25 minutes then 350 degrees for 30 minutes. Cover edges of the pie with foil strips.
