Nana’s Squash Casserole

Ingredients:

2 large cans of Margaret Holmes squash- drained
1 tbsp. butter
1 can (10 ¾ oz) cream of chicken soup (undiluted)
1 grated carrot
1 small onion, chopped
Salt and pepper to taste
½ cup (8 oz) sour cream
1 pk. (8 oz) corn bread stuffing mix

Recipe Instructions:

Cook onion chopped up for 5 minutes. Drain onion and add to squash. Add salt and pepper and 1 tbsp. of butter to onion and squash. Stir in soup and sour cream and carrot to squash and onion mixture. Combine ½ cup butter and stuffing mix; stir well till blended. Put half of stuffing into squash mixture. Put in a 2 qt of buttered casserole dish. Put the remaining stuffing mix on top of casserole.  Bake at 375 degrees in oven for 30 minutes.
