Old Fashioned Collard Green Sandwich

Ingredients:

1 large can Margaret Holmes seasoned collard greens
2 boxed of Jiffy or Martha White Cornbread Mix
8 slices of thick-cut bacon
8 pats of butter
¼ tsp. Texas Pete Hot Sauce
½ tsp. sugar
¼ tsp. white vinegar (optional)

Recipe Instructions:

Prepare cornbread mix according to directions on box. Bake in 9 x 12 non-stick baking dish. In a non-stick fry pan, cook bacon until crisp. Save 2 tsp. of grease. In a non-stick fry pan, add 2 tsp. bacon grease. Open and add collard greens, hot sauce, and sugar. Cook about 3 minutes. Add vinegar (optional). Drain. Cut cornbread into 8 squares. Remove from pan and slice open. Add 1 pat of butter to top half. On bottom half, add collard greens and 1 slice of bacon, cut in half. Put halves together and serve. Makes 8 servings.
