Patricia’s Recipe
Ingredients:
1 can Margaret Holmes tomatos, okra, and corn
1 ½ top olive oil
2 tsp. Italiano seasoning
½ tsp. salt
½ tsp. pepper
½ tsp. of lemon
2 tsp. parmesan or romano cheese
½ cup shredded mozzarella cheese
1 pkg. cornbread mix or make according to cornbread package
Recipe Instructions:
Preheat oven to 350 degrees. Make cornbread mix according to the package directions. Place in 1 tsp. oil in baking pan and place in pre-heating oven. In small sauté/frying pan put 1 ½ tsp olive oil. Open the can of Margaret Holmes into pan. Add 2 tsp. Italian seasoning. Add ½ tsp of salt, and pepper. Cook for 2 minutes. Squeeze ½ tsp of lemon into mixture. Stir well. Add 2 tsp melted parmesan. Cook 1 minute. Take oiled baking dish from oven and pour in the cornbread mixture, mix milk if too dry. Then pour Margaret Holmes mixture over cornbread. Sprinkle with ½ cup shredded mozzarella cheese. Bake approximately 20 till top is golden brown.
