Red’s Jammin’ Veggies

Ingredients:

2 lbs. Chopped onions
2 lbs. Zucchini
7 oz. Roasted Pepper
1 Clove Garlic
2 red and Green Peppers, sliced
1 chopped egg plant
1 chopped Japanese egg plant
¼ cup vegetable oil
1 cup water
12 oz. diced tomatoes
Basil to taste

Recipe Instructions:

Saute ½ lb cubes pork then add the following ingredients in skillet and cover

Saute to desired texture. Cook time approximately 25 min.

In separate bowl add:

6 oz. can of black olives
½ cup extra virgin olive oil
3 tablespoons of Texas Pete
7.5 oz can of Margaret Holmes shelled boiled peanuts
Salt to taste
Cut parsley

Mix all ingredients together and serve; 8-10 servings.
