Southern Cilantro Shrimp
Ingredients:
4 tbsp. olive oil
1 medium onion, chopped
4 cloves of garlic, chopped
1 ½ lbs of peeled raw shrimp
1 medium green peppers, chopped
1 tsp. cumin
2 cans of Margaret Holmes tomato, okra, and corn
2 tsp. of Texas Pete hot sauce
Zest of 1 lemon
1 cup of cilantro, chopped
6-8 mint leaves, chopped
Recipe Instructions:
In a pan, sauté onion in oil until it turns a light golden brown. Add diced green pepper, shrimp, cumin, Texas Pete hot sauce, lemon zest, and sauté with the onions and pepper for 4-5 minutes until the shrimp turns orange. Add 2 cans of Margaret Holmes tomato, okra and corn. Add half the ingredients together and let it cook on medium heat for 4-5 minutes. Add lemon juice and mint leaves and remaining cilantro. Serve along with cooked rice.
