Vegetable Soup
Ingredients:
1 (14.5 oz) can Margaret Holmes triple succotash vegetables
2 (14.5 oz) cans Margaret Holmes Tomatoes, okra and corn.
1 (15 oz) can veg-all original mixed vegetables
2 large potatoes
1 tbsp. “Crockery Gourmet” beef stew seasoning
1/8 cup chopped sweet onion
Recipe Instructions:
Peel and dice potatoes and boil for about 15 minutes (until soft but not “mushy”). Drain the water and put potatoes and remaining water in large pot. Drain liquid from the pot and put the veggies in the pot along with the 3 cans of Margaret Holmes canned vegetables, chopped onion and Crockery Gourmet seasoning. Add enough water to the entire mixture, should be soupy. Cover pot with lid and bring to a boil then reduce the heat until the soup simmers, stirring occasionally. Let simmer for about 1 hour.
(Can also add a small bit of pre-cooked roast beef if desired)
