Veggie Mellie
Ingredients:
Dunbars Roasted Peppers, 1 – 7 ounce jar, drained and sliced
3 slices of bacon cooked stovetop to reserve residue
2 cans Margaret Holmes Tomatoes, Okra and Corn, drained
1 medium onion, chopped
¾ cup celery, chopped
1 cup butter peas or limas (may be small can or frozen)
½ cup half and half (fat free okay)
1 tsp. Italian seasoning
1 tsp. Worcestershire sauce
Texas Pete Hot sauce drops and salt and pepper to taste
Recipe Instructions:
Saute celery and onion in bacon drippings and put aside. Heat together Margaret Holmes tomatoes, okra and corn and lima beans (or butter peas) on medium setting. Slowly add Half and Half, while continuing to stir. Add all seasonings. Stir again. May be reheated. 4 – 6 servings
