
Hoppin’ John Stuffed Sweet Potatoes
Sweet potatoes bursting with seasoned Hoppin’ John, fun, hearty, and festive!
Ingredients
- 2 large sweet potatoes (baked until tender)
- 1 can Margaret Holmes Hoppin’ John, warmed (15 oz)
- Optional Toppings: shredded cheese,chopped green onions, or a drizzle of hot sauce chopped green onions, or a drizzle of hot sauce
Instructions
- Preheat oven to 400°F if baking sweet potatoes fresh. Pierce each potato several times with a fork and bake for 45–50 minutes, or until tender. (Alternatively, use pre-baked or microwaved sweet potatoes.)
- Warm the Margaret Holmes Hoppin’ John in a small saucepan over medium heat until heated through.
- Slice each sweet potato lengthwise and gently fluff the inside with a fork.
- Spoon warm Hoppin’ John over each potato.
- Add optional toppings like cheese, green onions, or a drizzle of hot sauce for extra flavor.
- Serve warm as a hearty Thanksgiving side or even a light entrée.
