Hoppin’ John Stuffed Sweet Potatoes

Sweet potatoes bursting with seasoned Hoppin’ John, fun, hearty, and festive!

Ingredients

  • 2 large sweet potatoes (baked until tender)
  • 1 can Margaret Holmes Hoppin’ John, warmed (15 oz)
  • Optional Toppings: shredded cheese,chopped green onions, or a drizzle of hot sauce chopped green onions, or a drizzle of hot sauce

Instructions

  • Preheat oven to 400°F if baking sweet potatoes fresh. Pierce each potato several times with a fork and bake for 45–50 minutes, or until tender. (Alternatively, use pre-baked or microwaved sweet potatoes.)
  • Warm the Margaret Holmes Hoppin’ John in a small saucepan over medium heat until heated through.
  • Slice each sweet potato lengthwise and gently fluff the inside with a fork.
  • Spoon warm Hoppin’ John over each potato.
  • Add optional toppings like cheese, green onions, or a drizzle of hot sauce for extra flavor.
  • Serve warm as a hearty Thanksgiving side or even a light entrée.
