Sweet potatoes bursting with seasoned Hoppin’ John, fun, hearty, and festive!

Ingredients
2large sweet potatoes(baked until tender)
1canMargaret Holmes Hoppin’ John, warmed(15 oz)
Optional Toppings: shredded cheese,chopped green onions, or a drizzle of hot saucechopped green onions, or a drizzle of hot sauce
Instructions
Preheat oven to 400°F if baking sweet potatoes fresh. Pierce each potato several times with a fork and bake for 45–50 minutes, or until tender. (Alternatively, use pre-baked or microwaved sweet potatoes.)
Warm the Margaret Holmes Hoppin’ John in a small saucepan over medium heat until heated through.
Slice each sweet potato lengthwise and gently fluff the inside with a fork.
Spoon warm Hoppin’ John over each potato.
Add optional toppings like cheese, green onions, or a drizzle of hot sauce for extra flavor.
Serve warm as a hearty Thanksgiving side or even a light entrée.
